Y Recipes - Chicken Stew

I N G R E D I E N T S

  • 1.5kg diced chicken breast
  • 1 large onion (or 2 small
  • onions), finely chopped
  • 2 red capsicums, finely
  • chopped
  • 2 x can diced tomatoes
  • 2/3 cup tomato paste
  • 3 teaspoons sugar
  • Pinch of salt
  • 2 mild chorizo sausages,
  • thinly sliced
  • 2 cups of frozen carrot,
  • peas and corn mix

To Serve:

  • 5 cups basmati rice

M E T H O D

  1. Peel and finely dice onion
  2. Chop up capsicum
  3. Place onion, capsicum, diced tomatoes, tomato paste, sugar and salt into slow cooker and mix well
  4. Place lid on slow cooker and cook for 3 hours on high
  5. Cut up chorizo into thin slices, and add to slow cooker
  6. Cook for another 20 minutes
  7. Add 2 cups of frozen carrot, corn and peas and cook for a further 10 minutes
  8. In the meantime, cook rice in rice cooker
  9. Serve rice with chicken stew on top

This recipe is gluten free, dairy free
and egg free.

Substitutions:
Veg: Use vegetarian 4-bean mix option
instead, served over rice
